Leaf: Tiny and sleek, tightly compressed dark brownish-green pearls, no stalks. Incredible aroma of roasted nuts, cookies, cocoa with hints of buttery baked scents, rising from the dried leaves.
Infused leaf: A little unfolded deep green curled pearls with persistent sweet herbal aroma, baked wood and a little spiciness is tangling my head.
Liquor: Cup is bright and clear, the colour of warm hay with pervasive floral fragrance. The light smooth and fruity liquid tastes of exotic spiced wood, peaches, geranium blossoms and thyme. It has no astringency and the fruity and spicy notes lingers in the mouth for a long time.
About: Ali Shan is one of “Gao Shan Cha” which refers to high altitude teas (700m-1700m). They are Taiwan's most beloved high quality wulongs, hand-picked and carefully processed for total of 10 days. This involves three times rolling and roasting on each day with three day rest in between each roasting. The Ali Shan mountain range is a national park and has many peaks covered with mist and clouds which creates the best growing conditions. Because of the steep slope elevations, slow growth, styles of plucking and small size of the tea gardens the yield for gao shan is small and makes these teas rare and unique in their own way.
